- 1 cup butternut squash diced
- 6 cups bone broth either beef, chicken or vegetable (homemade broth is best)
- 5 cups spinach green leafy spinach and kale mixed
- 1 cup celery chopped into 1/4 stalks
- 1 cup carrots
- 1 bunch parsley
- 1 tbsp olive oil
- 1/2 whole onion chopped
- 1 tsp apple cider vinegar
- 2 cloves garlic optional
- 1 pinch salt to taste
- 1 pinch pepper to taste

- In a large heavy pot, heat oil over medium-low heat. Simmer the onions and garlic slightly. Add the diced butternut squash and broth of your choice.
- Raise the heat and bring the mixture to a boil.
- Reduce the heat to medium temperature until the butternut squash is tender, about 15 minutes. Add in the remaining ingredients (you can use any other vegetable as a combination or in place of the above veggies but use a total of 5 cups combined).
- Working in batches, puree the mixture in a blender until smooth.
- Season to taste
