Do you love watching the children’s educational program Sesame Street growing up? I love watching Sesame Street growing up and actually even now. And I love the character Elmo, an adorable red furry monster with a falsetto voice. Since Elmo never liked brussels sprouts, I didn’t grow up liking it either. If you are like Elmo and hate Brussel sprouts, I hope this recipe will change your mind.
This recipe pairs Brussels sprouts with small bay scallops and honey to help balance and take off the occasional slight bitter taste in Brussels sprouts. Brussels sprouts are like mini cabbages and are extremely nutritious for you. They are packed with vitamin C, A and B6. They are also an excellent source of fiber. Brussels sprouts have been studied quite extensively and have been found to have anti-cancer properties and cholesterol-lowering capabilities when consumed on a regular basis. [1]
There are many ways to prepare Brussels sprouts, from steaming to pan-frying to roasting. The healthiest way of preparation is of course steaming but for maximum flavor, I prefer to either roast them in the oven or sauté them like in this Scallops and Brussels Sprouts Stir Fry recipe. This recipe is so simple to make and I typically make this at least once a week during summertime when Brussels sprouts are in season. They taste exceptionally nice when they are in season. Some stores even sell them intact on their stalks! This recipe pairs really well with a side of quinoa to make a complete meal. If you would like more sauce to drizzle over your quinoa, feel free to add about a quarter cup of water or vegetable broth when making the sauce.

- Ingredients for Sauce:
- 1 teaspoon honey (raw, organic)
- 2 tablespoons liquid aminos
- 1/2 teaspoon ground black pepper
- pinch cayenne pepper (optional)
- Ingredients for Main Meal:
- 2 tablespoons olive oil extra virgin, organc
- 2 cloves garlic minced
- 1 small shallot minced
- 1 pound Brussels sprouts washed, halved
- 2 cups crimini mushrooms sliced
- 1/2 pound bay scallops fresh or thawed
- 1/4 teaspoon sea salt (to taste)

- Whisk the sauce ingredients in a small mixing bowl until well combined and set aside.
- Heat oil in a large skillet over medium-high heat.
- Add garlic and shallots to skillet and fry until fragrant, about 1 minute.
- Add Brussels sprouts and fry until golden, about 4 to 5 minutes.
- Add mushrooms and salt and fry for another 1 to 2 minutes.
- Add scallops and fry until they are cooked and turned pink.
- Add sauce and stir well to combine.
- Turn off heat and serve warm.
