- 2 whole avocados medium size
- 1/2 whole tomato large, chopped
- 2 tbsp onions tablespoons organic, finely chopped
- 2 tbsp cilantro finely chopped
- 1 whole lime medium, juiced
- 1 tsp chili powder
- 1/2 tsp salt or to taste
- 1/2 tsp pepper or to taste
- 1/2 cup red pepper or yellow pepper, finely chopped, optional
- 1/2 cup corn niblets, optional

- Halve the avocados and take out the pits and scoop into a bowl.
- Mash the avocados with a fork but leave some larger chunks.
- Add lime juice, onions and cilantro until everything is combined but still remains a little chunky.
- Stir in the tomato, chili powder and salt and pepper and adjust the seasonings as needed
