- 1/2 lb kale baby kale
- 1/2 cup carrots shaved
- 1 tbsp lemon juice fresh organic
- 2 tbsp shallot minced
- 2 tbsp olive oil extra-virgin
- 1/4 cup parmesan cheese shredded, or grated rice or soy cheese
- 1/4 cup sunflower seeds raw
- 1/4 tsp sea salt
- 1 pinch black pepper ground, to taste

- In a large bowl, whisk together the lemon juice, shallot, salt, and olive oil.
- Toss the kale in the dressing with the parmesan cheese, carrots and sunflower seeds.
- Season with sea salt and black pepper.
If you can’t find baby kale, you can use Tuscan kale. Before tossing with the dressing, remove and discard the large, center stems. Then, working in batches of about 8 leaves, stack the leaves and cut them crosswise into thin strips.
