Raw Kale Salad
Kale is so good for you and is considered a super food due to its many health-promoting properties. Kale is descendent of the wild cabbage, which is why it is similar to other cruciferous vegetables such as broccoli, cauliflower, mustard greens, brussels sprouts and bok choy. All cruciferous vegetables are known for their high health-benefits of sulfur containing phytonutrients. Sulfur is used by the liver to help neutralize and detoxify your body of potentially toxic substances. Kale is also high in compounds known as carotenoids, lutein, and zeaxanthin which are powerful antioxidants and protect the lens of your eyes. Kale’s nutritional value includes many nutrients, vitamins, folate, magnesium, and fiber. Kale is considered a superfood because it helps with detoxification, heart health and reduces the risk of many cancers. It is truly a power house for its nutrient-rich properties and health benefits.

  1. In a large bowl, whisk together the lemon juice, shallot, salt, and olive oil.
  2. Toss the kale in the dressing with the parmesan cheese, carrots and sunflower seeds.
  3. Season with sea salt and black pepper.
Recipe Notes

If you can’t find baby kale, you can use Tuscan kale. Before tossing with the dressing, remove and discard the large, center stems. Then, working in batches of about 8 leaves, stack the leaves and cut them crosswise into thin strips.
