Kale is a Superfood
Kale is so good for you and is considered a superfood due to its many health-promoting properties. Kale is popular among health activists and it is for good reason. The benefits go well beyond providing a truckload of vitamins and minerals; this superfood is packed with phytonutrients such as glucosinolates and flavonoids as well.
Kale is descendent of the wild cabbage family, which is why it is similar in nutritional values to other cruciferous vegetables such as broccoli, cauliflower, mustard greens, brussels sprouts and bok choy.
All cruciferous vegetables are known for their high health-benefits of sulfur-containing phytonutrients. Sulfur is used by the liver to help neutralize and detoxify your body of potentially toxic substances. Kale is also high in compounds known as carotenoids, lutein, and zeaxanthin which are powerful antioxidants and protect the lens of your eyes. Kale is rich in nutrients such as vitamin A (from beta-carotene), B vitamins, vitamin C, vitamin K, copper, potassium, iron, and fiber.

Similar to kale, apples also contain high amounts of fiber known as pectin. In general, foods high in fiber help to slow the digestion of food, making you consume less, which may lower your caloric intake and help you to lose weight.
