Raw Chocolate Mousse Cake

The fiber-rich health benefits of avocados have been known to help with reducing health conditions such as cardiovascular disease, type 2 diabetes, obesity and even weight loss. Half of an avocado is only approximately 80 calories but it is loaded with so many vitamins and minerals which make it a real super food. This recipe provides a splendid alternative to sugar treats but without the guilt or calories! What a fabulous way to serve yourself and others with a healthy cake.

First Layer

Chocolate Mousse Topping
Instructions
First Layer
  1. Process all the above in a food processor with S-blade
  2. Add the following and process till firm consistency forms, 1/2 cup coconut oil melted, 2-3 tablespoons honey according to taste, Press into a 7” spring form pan
Second Layer
  1. Blend above ingredients, except lecithin, until smooth. Add lecithin and blend until thoroughly mixed. Pour on top of the first layer and refrigerate for 1-2 hours.
Chocolate Mousse Topping
  1. Process above in a food processor with S-blade until smooth and chocolate mousse texture forms. Store in refrigerator to top each slice of cake when served
