  1. Fill a medium saucepan with all ingredients except the lemon juice and honey and bring to a boil.
  2. Reduce to a simmer and cook covered for about 45 to 60 minutes until the liquid has reduced by almost half.
  3. Remove from heat and let cool for about 10 to 15 minutes.
  4. Strain into a glass jar or bowl and stir in lemon juice and honey.
