  1. In a large heavy pot, heat oil over medium-low heat. Simmer the onions and garlic slightly. Add the diced butternut squash and broth of your choice.
  2. Raise the heat and bring the mixture to a boil.
  3. Reduce the heat to medium temperature until the butternut squash is tender, about 15 minutes. Add in the remaining ingredients (you can use any other vegetable as a combination or in place of the above veggies but use a total of 5 cups combined).
  4. Working in batches, puree the mixture in a blender until smooth.
  5. Season to taste
