Almond Breakfast Pancakes

  1. Combine all ingredients, except the toppings into a blender and blend for 60 seconds. The batter will become thick.
  2. Melt the coconut oil in the frying pan at medium heat.
  3. Place ½ cup of the mixed batter onto the griddle. These pancakes are easiest to cook if you make them little.
  4. Cook each pancake for a few minutes and then flip over.
  5. Top the pancakes with fresh berries before serving.
  6. Warm the honey and pour over the pancakes
  7. Sprinkle with cinnamon (optional)
